Gluten-Free Peanut Butter Cookies

Last weekend I tried to finally convert martainchicago.com to martainmichigan.com. I thought it would be easy(ish), but as you can see, it didn’t work out the way I’d hoped. I thought I had done it, but all I’d really done was pull my site down for a day. Oh well. I’ll try again sometime. If there are any tech geeks out there who know how to make this happen, please do tell! Moving on…

I came across this recipe in a recent issue of Better Homes & Gardens. Since I’m not a great baker, I normally pass on cookie recipes. After a quick glance, I thought since there were only three ingredients, I probably couldn’t mess it up. An added bonus? They’re gluten-free. We don’t normally have sweets around the house (except for the ridiculous amount of Halloween candy Evan bought for the upcoming holiday taunting me from the depths of the basement), but I thought I’d give these a try.

Three ingredients: 1 egg, 1 cup of sugar and 1 cup of peanut butter. That’s it! If you’re not a fan of peanut butter, or allergic, you can use almond, cashew or any other nut butter instead.

Preheat your oven to 375 degrees.

Add the ingredients to a mixing bowl. Stir to combine.

The recipe said it would make 32 cookies. I thought there was no way that could be possible. Fast forward half an hour and I had 31 cookies. Not too bad!

Roll a small piece of the dough into a ball, about 1″ in size. Place them on a cookie sheet lined with parchment paper. Gently press them down with a fork to create a criss-cross pattern.

Option: If you’d like, roll them in sugar before baking for an added sweet touch.

Bake for 8-12 minutes or until set. Remove from the oven and transfer to a cooling rack. Repeat until all of the dough is gone and you have a small mountain of cookies to enjoy!

Delicious, simple and quick to make! Next time you find yourself in a pinch when guests are coming over, give these a try. You won’t be disappointed!

I’ve been thinking of fun ways to make these a little more exciting. A couple ideas I’ve had so far are using 3/4 cup peanut butter and 1/4 Nutella or making ice cream sandwiches. What would YOU do?

Cook Time: 35 minutes

1 cup peanut butter
1 cup sugar
1 egg
Options: Extra sugar to roll the dough in, different kind of nut butter, extras like ICE CREAM
